Suh Sushi
On the outer south edge of the Colorado State campus stands a local favorite among students. Suh Sushi opened its doors in 2008 under owner Sung Suh. Originally from South Korea, Suh brings his roots and ties to Asia to his restaurant to share with his customers. Today, business is continuing to grow and thrive.

Sung Suh has gathered a phenomenal wait staff who strive to provide the best experience for their customers. Manager, Hugo Juarez says that the service they provide is what helps Suh Sushi remain successful.
"Seeing the customers happy makes me happy," said Juarez. "I'm happy to know that what we do helps bring our customers back and have a good experience." Former employee of Suh Sushi, and graduate of Colorado State, Steve Zbrozek, notes that the atmosphere created by the staff of Suh Sushi is mirrored by customers. The staff helps create a fun, laid back experience plus the potential for discovery - something customers feed off of, leaving satisfied. Both Juarez and Zbrozek discussed the unique challenge Suh Sushi faces as a cultural cuisine in terms of attracting customers, but believe the close proximity to campus has helped this issue remain manageable. "Most of our customers are college students. We attract a pretty good mix of all races here, but do have an increased clientele of study abroad students," said Zbrozek. Adding, "Outside of the college population, our next largest customer population is 30-40-year-olds." |

My ExperienceOn a chilly afternoon, I ventured from campus to Suh Sushi to satisfy my lunchtime hunger. The drive was quick as I found my destination just before the train tracks on Prospect Road, just south of campus. As I entered Suh Sushi I was quickly greeted by two members of the waitstaff and offered a free bowl of miso soup (due to the cold) while I waited for my order.
I could not resist the lunch special of three rolls of my choice for only $10.95. This may not seem like much, but I promise it is - nearly 30 pieces of sushi! I took my waitress's recommendation on what sushi to order, as there were too many choices to decide from, and I could not have been happier. If sushi is not your choice of cultural cuisine, do not avoid Suh Sushi. As an Asian fusion restaurant, there is a wide range of food options. They have bento boxes with your choice of chicken, beef, or tofu, multiple chicken, fish, or beef dishes, and soups and noodle dishes. However, if you still cannot find anything off the menu, Juarez and his staff are more than happy to accommodate your taste preferences and serve your favorite Asian dish. |
